Product description
Cloè by Abbazia San Giorgio is a vibrant rosé wine made from 100% Nerello Mascalese, grown on volcanic soils in Pantelleria. Sourced from a single hectare of mineral-rich, loose terrain, the vineyard is farmed biodynamically, without chemical inputs. This natural wine reflects a philosophy of non-intervention, with spontaneous fermentation by native yeasts and no additives—even no sulfur added at bottling.
Harvested in late September, the grapes undergo a two-day maceration that gives Cloè its bright coral-red hue. Fermentation lasts about 15 days, and aging occurs over six months in both stainless steel and chestnut barrels. The result is a fresh, elegant Mediterranean rosé with aromas of pomegranate, red fruits, and aromatic herbs. On the palate, it’s lively, mineral, and lightly saline—expressive of its volcanic island origins.
Cloè pairs beautifully with appetizers, shellfish, vegetarian dishes, white meat, and fish. Also delightful as a refined aperitif. Serve chilled at 10–13 °C to appreciate its elegance and purity—an authentic reflection of the Sicilian landscape in every sip.
