Product description
Garofalo by Abbazia San Giorgio is a distinctive natural red wine made from a blend of Nero d’Avola and Alicante grapes. Sourced from a single hectare of volcanic soil on Pantelleria, the vineyard is managed biodynamically without synthetic products, allowing nature to guide the vine's growth in harmony with its surroundings.
Harvested by hand in late September, the grapes are carefully selected, destemmed, and crushed. Fermentation occurs spontaneously with native yeasts and lasts around 15 days. The wine is aged for 12 months in stainless steel, followed by 18 months in used tonneaux—bottled without added sulfites. The result is a juicy, fresh red wine with fruity aromas, a subtle saline note, and gentle complexity.
Garofalo pairs wonderfully with traditional appetizers, cheese, meat broths, stews, Sicilian cuisine, and even some fish dishes. Serve at 14–18 °C to fully enjoy its vibrant and expressive nature. With only 2,000 bottles produced, Garofalo is a true gem for natural wine enthusiasts seeking something authentic and sun-kissed from southern Italy.
