Ddefiu is a rare natural wine made from 100% Zibibbo grapes, grown on 90-year-old bush vines in the UNESCO-recognized Pantelleria heritage. The grapes, partially dried on the vine, are harvested late and undergo spontaneous fermentation with over 60 days of skin contact. The wine is aged in chestnut barrels and amphorae for one year, with no sulfites added at any stage.
The bouquet is an explosion of Pantelleria: dried figs, orange zest, honey, and volcanic minerality. On the palate, it’s lightly sweet yet fresh, with a saline finish and delicate oxidative character.
Ddefiu pairs beautifully with soft and aged cheeses such as brie, blue cheese, or gorgonzola. Serve at 13 °C and experience a soulful, terroir-driven wine ideal for both food pairing and contemplative sipping.
