The Pin 8 is a unique and rare red passito from Cantina Carboni, made from 100% Aleatico, an aromatic indigenous grape variety that thrives on the sunny hills of Ortueri at an elevation of 700 meters in the heart of Sardinia. After careful manual selection, the grapes are harvested and dried on the vine (appassimento), then destemmed and gently pressed in temperature-controlled stainless steel tanks. The wine is bottled cold and continues to age in the bottle before release. Thanks to its excellent aging potential, the Pin 8 can be enjoyed ten to fifteen years after harvest.
In the glass, the Pin 8 displays a deep, rich ruby-red color with garnet reflections. The nose is intense and elegant, dominated by ripe fruit notes of blackberries, sour cherries, and figs, complemented by spicy nuances of Mediterranean scrub. On the palate, the wine balances its warmth and sweetness with a surprising freshness, making it complex and pleasantly drinkable, with a good, persistent finish.
Pin 8 is the perfect accompaniment to desserts, particularly traditional Sardinian dry pastries, but also pairs well with chocolate and spicy or blue-veined cheeses. As a digestif after a festive meal, it is a true treat.
