The Steinrossel Riesling Auslese is the most exceptional wine in the Weingut Keber Kolling range. An Auslese is a late-harvest wine made from exceptionally ripe grapes, with only the very best bunches being selected. From the famous Sommerlocher Steinrossel vineyard, with its poor sandstone and slate soil, comes a wine that masterfully balances the line between sweetness and acidity.
In the glass, the Auslese is clear and golden yellow. The aroma is intense and alluring: ripe vineyard peach, honey, apricot and a deep, mineral undertone from the slate soil. On the palate, the interplay between sweetness and acidity is exceptionally well-balanced: the rich, concentrated sweetness is beautifully framed by a lively, zesty acidity that never makes it feel heavy or tiring. A wine of perfect ripeness with a long, elegant finish.
A wine for special occasions, for those who take the time to savour it. It pairs excellently with peach- or apricot-based desserts, but is also a classic and superb choice with blue-veined cheeses such as Roquefort or Gorgonzola. With lightly spiced Asian dishes, its sweetness complements them surprisingly well. Even on its own, as a meditative wine after dinner, it is an unforgettable experience. Serve chilled at 8–10°C.
