Cantina Sabaini's Valpolicella DOC is an elegant and accessible red wine that beautifully reflects the character of the Valpolicella region. The grapes - Corvina, Corvinone and Rondinella - come from hilly vineyards in Illasi and Oasi Musella, in the province of Verona. At an altitude of 175 metres, the vines benefit from both north-eastern and southern sun exposure, ensuring balanced ripening and aromatic intensity. The soils consist of medium-heavy alluvial soils with a lot of rocky material, which contributes to the wine's refined structure. The grapes are harvested by hand in October, when they have reached their optimal phenolic ripeness.
After harvesting, the grapes are destemmed, crushed and fermented at controlled temperatures of 22 to 24Ā°C for eight to 10 days. This is followed by gentle pressing and ageing in stainless steel tanks until bottling to preserve the pure fruit character. In the glass, the wine shows a deep ruby colour with vibrant reflections. The bouquet is refined and spicy, with notes of cherries and small red fruits, complemented by subtle spices. The palate is supple, polished and harmonious, with an elegant balance between freshness, fruit and soft tannins.
The Valpolicella DOC is the ideal wine for any occasion and pairs excellently with flavoursome pasta dishes, grilled meats and semi-hard cheeses. Its accessible character also comes into its own with a classic lasagne or a risotto with mushrooms. Serve this wine slightly chilled, between 16 and 18Ā°C, to fully experience its full expression and velvety finish.
