Zibimbo Vino Bianco Zibibbo IGT Terre Siciliane by Abbazia San Giorgio is a rare and refined natural wine made from 100% Zibibbo grapes grown on the volcanic terraces of Pantelleria. From the 2022 vintage and with 12% alcohol, only 2,000 bottles of 750 ml are produced—making this a true gem for lovers of artisanal wines.
The 60-year-old vines are cultivated on 2.5 hectares using the traditional alberello pantesco method, recognized by UNESCO as intangible cultural heritage. The loose, volcanic soil is low in organic matter but rich in micro-elements, contributing to the unique expression of the Zibibbo grape. The vineyards are managed biodynamically, without chemical fertilizers or synthetic treatments. A specific pruning technique encourages a second bloom, resulting in a late harvest in October. The grapes are hand-picked, gently crushed, and spontaneously fermented with indigenous yeasts. After a short maceration, the wine is aged for 8 months in stainless steel tanks, followed by 2 months in bottle.
Zibimbo delivers vibrant citrus aromas, delicate floral notes, and a mineral backbone. On the palate, it is fresh, clean, and subtly structured—reflecting the sun-drenched Sicilian terroir. Best enjoyed with shellfish, seafood, pizza, vegetables, savory tarts, and light starters. Serve chilled at 10–12 °C to fully appreciate its natural purity and Mediterranean elegance.
