The Ambris is an ambitious and complex Sauvignon Blanc from certified organic vineyards on the south-facing slopes of Umbria, at an altitude of 490 to 550 metres. The soil consists of sedimentary clay, gravelly sand and alluvial silt containing marine fossils from the Middle Pliocene, which gives the wine a pronounced minerality. Following a hand-harvest, the destemmed grapes are pressed and fermented at a controlled temperature of 15°C for 15 to 20 days. Part of the wine is then aged in amphorae with six months’ skin contact, part in stainless steel tanks and part in barriques, after which the wine undergoes a further four months’ bottle ageing before release.
The Ambris stands out for its remarkable depth and complexity. The nose offers a rich aromatic bouquet of honey, mint, citrus and hazelnut. On the palate, texture and concentration combine with freshness and elegance, the result of ageing in three different vessels. It is a wine that both surprises and delights, revealing more with every sip.
With its full body and complex profile, the Ambris pairs excellently with dishes featuring grilled white meat, herb-roasted chicken, fish in a butter sauce with capers and lemon, goat’s cheese, and richer dishes featuring asparagus or mushrooms. It also pairs superbly with refined Mediterranean starters.
