The Brut Nature Spumante is a rare and elegant sparkling wine from certified organic vineyards on the east-facing slopes of Torre Bisenzio in Umbria, at an altitude of 550 to 580 metres. The soil consists of sedimentary clay, gravelly sand and alluvial silt containing marine fossils from the Middle Pliocene, a terroir that gives the wine its characteristic minerality and freshness. Following a hand-harvest, the destemmed Pinot Nero grapes are pressed and fermented in temperature-controlled stainless steel tanks. The wine then undergoes a second fermentation in the bottle, maturing on its lees for approximately 24 months. Following disgorgement in May 2021, no dosage is added, resulting in a pure and authentic Brut Nature character.
In the glass, the Brut Nature Spumante displays the elegance and freshness that are characteristic of the estate. The nose offers a nuanced profile of minerality and freshness, complemented by the characteristic notes of yeast and bread dough crumbs resulting from the prolonged ageing on the lees. On the palate, the wine is crisp, refined and distinctly dry, with a lively effervescence and a long, briny finish that perfectly reflects the terroir. With only 750 bottles produced, this is an exceptional collector’s item.
The Brut Nature Spumante is a versatile dining companion that pairs excellently with seafood, oysters and shellfish, light fish dishes, crustaceans, poultry and fresh soft cheeses. It also works a treat as a refined aperitif or with light, fried dishes.
