Product description
Ca 'd Cudòn is a dry, crisp natural wine from VIV Winery in San Marzano Oliveto, nestled in the Piedmontese hills, named after the family’s ancestral home—“Ca ed Cudòn” in the Piedmontese dialect. This 100% Sauvignon Blanc is organically grown on heavy marine clay soils at an elevation of 250 meters, with five-year-old vines tended by hand, without herbicides or chemical fertilizers. After a hand-harvest in August, the grapes are pressed immediately and fermented spontaneously with native yeasts in stainless steel tanks, without temperature control. The wine then ages for twelve months in tank, without filtration or fining, and with a minimal addition of sulfites (29 mg/L).
In the glass, the Ca 'd Cudòn is a bright, dry white wine with a light aromatic profile. The nose offers lingering notes of white peach and apricot, complemented by delicate herbal nuances of sage and elderflower. On the palate, the aromas and structure are well-balanced, resulting in a refreshing, approachable sip with an honest and unpretentious character—typical of a wine made with minimal intervention.
Ca’ d Cudòn is an ideal pairing for seafood such as grilled shrimp, ceviche, and oysters, as well as Asian dishes like sushi, Thai noodle dishes, and lightly spiced stir-fries. Its fresh structure and herbal notes also make it excellent as an aperitif or with light summer dishes.
