Product description
Viv Winery's 28/12 is no ordinary wine, but a playful and quirky interpretation of what natural wine can be. The name refers to 28 December - a winter date - while the wine actually carries the feeling of summer. It is a nod to a changing world, where seasons are blurring and traditions are being revisited. This lightly sparkling, skin-contact white wine is fresh, lively and made to surprise.
The wine is made from 100% white Muscat grapes, sourced from southern vineyards with heavy clay soils of marine origin. Everything is done by hand, according to organic principles, with no artificial interventions. A five-day maceration is followed by spontaneous fermentation with indigenous yeasts in stainless steel. The wine is already bottled during fermentation, which allows fermentation to continue in the bottle and creates a slight sparkle.
In the glass, the wine is slightly effervescent and refreshing, with a low alcohol content and a playful character. Aromas of lemon, tangerine, white peach and chamomile subtly emerge, followed by a surprising hint of apple pie in the finish. This is a wine that not only quenches thirst, but also tells a story - about change, nature and letting go of conventions.
