Viv Winery's Universi Paralleli is a playful and vibrant pet-nat rosé that brings together two worlds: tradition and experimentation, simplicity and character. The name - "Universi Paralleli" - refers to the interplay of grapes, terroir and natural vinification, in which everything comes together into one vibrant whole. It is a wine that feels light and cheerful, but has depth at the same time.
Made by co-fermentation of two indigenous grapes from the hills of Monferrato Astigiano, this wine perfectly reflects its origins. The grapes grow on south-facing slopes on clay soils and are harvested by hand. Fermentation starts spontaneously with indigenous yeasts and is completed in the bottle, giving the wine its natural, light sparkle. Everything is done with minimal intervention, preserving purity and expression.
In the glass, Universi Paralleli shows an intense pink colour and a fresh aromatic profile. Tones of strawberry and red cherry are complemented by a subtle balsamic touch, giving the wine just that extra character. Slightly effervescent, dry and refreshing, this is the perfect wine for aperitifs and relaxed moments.
