Viv Winery's L'Onirico Vignaiolo is an ode to the simple beauty of peasant life. This wine tells the story of generations living close to nature, where wine is not a luxury product but a daily ritual at the table. With its roots in tradition and its soul in the present, this is a wine that exudes tranquillity and authenticity.
The grapes - mainly 100% Dolcetto, sometimes supplemented by Barbera depending on the vintage - grow on heavy clay soils of marine origin. Everything is done by hand, according to organic principles and with minimal intervention. A 15-day maceration is followed by spontaneous fermentation with indigenous yeasts, after which the wine matures in stainless steel. With no filtering or clarification, the pure character of the grape remains fully intact.
In the glass, the wine shows a deep ruby colour with purple nuances. Aromas of blackberry, plum and violets emerge immediately, while the mouthfeel is velvety, carried by mild tannins and fresh acidity. The result is an approachable, rustic wine with a homely character - exactly as it is meant to be enjoyed daily, in good company.
