Bat by Abbazia San Giorgio is a playful natural wine from Pantelleria, named after its winemaker Battista Belvisi—affectionately known as “Bat” among friends. This red blend of Nerello Mascalese and Alicante grows on volcanic soils rich in minerals. The vineyards are managed biodynamically, with no chemicals or treatments, following a non-interventionist philosophy.
Harvested in early October, the grapes are destemmed and crushed by hand. Fermentation occurs spontaneously with wild yeasts over 15 days, followed by a short 24-hour maceration to achieve a delicate color and aroma. The wine ages for 8 months in stainless steel, then in used tonneaux, and is bottled unfiltered and without sulfur.
Bat delights with fresh notes of red berries and pomegranate, balanced by a savory, saline finish. It is highly drinkable and versatile, pairing well with stewed fish, boiled meats, or hearty stews. Serve slightly chilled at 14 °C to enjoy this elegant reflection of Pantelleria’s volcanic landscape.
