1x 8 Vírgenes Blanco DOP Sierra de Salamanca — White · 12.5% · €12,50 per bottle An ambitious white blend from six different vineyards, made from Palomino, Viura, Moscatel and Rufete Blanco. Early harvested, spontaneously fermented with native yeasts and bottled unfiltered. Full-bodied and aromatic, with ripe fruit, flowers, herbs and fine yeast notes. Delicious with seafood, creamy pastas, white meat and soft cheeses.
1x La Novena Virgen Blanco DOP Sierra de Salamanca — White · 14% · €21,50 per bottle The most remarkable white wine in the package: an aged white Rufete Serrano, a grape that was only officially recognised as a wine-producing variety in 2020 after thirteen years of procedures. Vinified like a red wine with skin maceration, then aged for eight months in French oak barrels with weekly bâtonnage. Rich notes of lemon, quince, orange blossom and a subtle toastiness. A wine every wine lover should try.
1x Luzmila Rosado DOP Sierra de Salamanca — Rosé · 13% · €12,50 per bottle A rare lagrima rosé made from 100% Rufete, fermented in a concrete vat. The grapes are pressed at -5°C on dry ice to preserve the beautiful onion-skin colour of the Rufete grape. Wild red fruit, minerality and a pastry-like finesse on the palate. Glyceric, full-bodied and pleasantly long. A rosé unlike anything you've tasted before.
1x Cabras Pintás Tinto DOP Sierra de Salamanca — Red · ±13% · €12,05 per bottle Named after the prehistoric cave paintings in the Batuecas Valley. An approachable rustic red blend of Tempranillo (60%), Rufete (30%) and Garnacha (10%) from vines over 60 years old. Sloe, candied plum, herbs and balsamic, with ripe fruity tannins and a well-balanced long finish. The entry point into the red wines of La Zorra.
1x Raro Tinto DOP Sierra de Salamanca — Red · 14.5% · €14,20 per bottle The name is an acronym for Rufete Auténtico Realmente Original, the flagship single-varietal Rufete of the house. From two small plots in the Valdáguila Valley on slate and clay. Mineral and spicy, with red fruit, dried herbs, creamy oak and a long silky finish. Powerful, balanced and with a lively freshness.
1x Rarísimo Garnacha DOP Sierra de Salamanca — Red · 15% · €18,15 per bottle The absolute wildcard of the package: only 1,261 bottles produced from 100% Calabrés (Garnacha Calabresa) from three small plots at 800 metres altitude, through whole-cluster fermentation in a concrete vat. Elegant and complex, with wild berries, river stone, green tea and flower petals. Silky, mineral and long. A wine for wine lovers who want to discover something truly special.
