Product description
The Canevette is Cantina Ongaresca’s most distinctive sparkling wine, made from 100% Vitignale. This indigenous grape variety from Lessinia is virtually unknown outside the region, but deserves every attention. Unlike the estate’s other sparkling wines, the Canevette is produced using the Metodo Martinotti, also known as the tank or autoclave method, which keeps the wine fresher and more immediate.
The Vitignale grapes ferment in the cellar at a controlled temperature, followed by a second fermentation in an autoclave lasting 3 to 6 months. In the glass, the Canevette is straw-yellow with fresh, lively bubbles. The aroma combines white blossom, grapefruit and red berries with fresh citrus notes. On the palate, it is round and balanced, with a lovely, fresh finish and a pleasantly slight bitter aftertaste that is typical of this grape variety.
Canevette is the perfect aperitif, but also surprises when paired with raw fish, sushi and sashimi. Its fresh, direct style also makes it suitable for light salads and seafood. Serve chilled at 6–8°C.
