The Passito di Merlot is Cantina Ongaresca’s most exceptional wine and one of the most unexpected: a sweet dessert wine made from the Merlot grape variety, produced using the traditional passito method. The selected grapes are dried for 60 to 75 days in a naturally ventilated room, after which they undergo spontaneous fermentation at a low temperature. The wine is then aged for 18 months in wooden barrels.
In the glass, the Passito di Merlot displays a deep red colour with beautiful nuances. The aroma is intense, with dark berries preserved in alcohol, and distinct notes of balsamic and vanilla. On the palate, it is sweet and pleasant, with an elegant sweetness due to the presence of soft, ripe tannins. On the palate, it offers an elegant sweet sensation thanks to the presence of very soft tannins. Excellent as a dessert wine or paired with seasonal dishes.
The Passito di Merlot is the perfect way to round off a meal. It pairs beautifully with chocolate desserts, cakes and pastries, but it is also a classic pairing with blue-veined cheeses and mature cheeses. Serve at 16–18°C.
