Cantina Ongaresca’s Sauvignon demonstrates what the unique soils of Monte Ongaresca can do for international grape varieties. On the calcareous soils of the Lessinia – a hundred million years old and rich in sediments – Sauvignon finds an ideal home. The wine is aged for 9 months in stainless steel tanks, which preserves the grape variety’s aromatic character to the full.
In the glass, the Sauvignon is clear and straw-yellow. The nose is aromatic and complex: tropical fruit, fresh herbs and a hint of vanilla, complemented by the subtle minerality of the limestone soil. On the palate, it is long and rich in aroma, with an elegant smoothness and soft, ripe tannins that give the wine structure. A full-bodied yet fresh white wine with character.
This Sauvignon pairs excellently with grilled fish, fried asparagus, vegetable dishes and fresh crudités. It is also an excellent choice with light cheese dishes and starters. Serve at 8–10°C.
