Maison D&D's Chardonnay - Vallée d'Aoste DOC is a fresh, lively white wine that perfectly reflects the mountainous elegance of the Valle d'Aosta. Made from 100% Chardonnay, sourced from hillside vineyards grown according to the Guyot system, this wine shows the pure expression of terroir and craftsmanship. The grapes are harvested in early to mid-September, when they have reached their ideal ripeness and the aromas have fully developed.
After a short cold maceration, the grapes are gently pressed and fermented at controlled temperatures. The wine then matures in stainless steel vats on fine yeasts ("sur lies") with weekly bâtonnages, adding roundness, complexity and a subtle texture. In the glass, it shows a bright straw yellow colour with delicate sparkles. The nose is refined and harmonious, with fruity and floral notes reminiscent of citrus, apple and white blossom. On the palate, it is fresh, mineral and balanced, with lively acidity and a lingering finish that combines elegance and mountain character.
The Chardonnay - Vallée d'Aoste DOC is a versatile wine that is excellent with light dishes such as salads, sushi, oysters and other fish dishes. It also comes into its own perfectly as an aperitif, accompanied by small bites or light cheeses. Serve well chilled to let its fresh citrus aromas and delicate minerality fully speak for itself.
