The Chone is a tribute to Cirò, the town known in ancient times as Chone and founded by the Greek hero Philoctetes as one of the cities of Magna Graecia. This Cirò DOC Rosso Classico Superiore from Mimmo Vinci is made exclusively from 100% Gaglioppo, grown on the limestone-rich clay soils of Cirò Marina. Grown using the cordon spur training system, the grapes are harvested in the third ten-day period of September or early October, after which they undergo cold fermentation with a 10-day maceration to optimally preserve the grape’s fresh fruitiness. The wine is then aged for 13 months in stainless steel tanks, followed by 2 months of bottle ageing before release.
In the glass, the Chone displays a bright ruby red colour. The nose is aromatic and inviting, with pronounced notes of ripe red fruit such as cherries and blackberries. On the palate, the wine is persistent and well-balanced, with good structure and a long, satisfying finish that beautifully reflects the character of the Gaglioppo grape and the limestone-rich terroir of Cirò Marina. An authentic and honest wine that tells the story of generations of winegrowers.
The Chone pairs excellently with grilled red meat, roast lamb, stews, pasta with spicy sauces and medium-mature to hard cheeses such as Calabrian pecorino. It also pairs particularly well with traditional Calabrian dishes such as ‘nduja and Calabrian sausage.
