The Collesanti Perlage 24 is an elegant sparkling wine made from 100% Chardonnay, sourced from the Tenuta di Tessello in the hills of Cesena. Following the first fermentation with selected yeasts at a controlled temperature, the wine undergoes a second fermentation in the bottle, during which it matures on the lees for 24 months, giving it its characteristic complexity and fine perlage.
In the glass, Perlage 24 displays a pale straw-yellow colour. The nose offers pleasant notes of yeast and pastry cream. On the palate, the wine is refined and elegant, full-bodied yet fresh, with a long and pleasant finish typical of the traditional method.
The Perlage 24 is an excellent accompaniment to steak tartare and raw fish, smoked fish and fish antipasti. It is also ideal as a refined aperitif for festive occasions.
The wine comes directly from the winemakers, they send the bottles themselves.
