Product description
La Montina's Franciacorta Dosage Zéro is the purest expression of the terroir in the heart of Franciacorta. The grapes, 75% Chardonnay and 25% Pinot Nero, come from vineyards on recent moraine soils with gravelly, shallow soils. These conditions produce grapes with vibrant freshness and pronounced acidity. Harvesting is done entirely by hand in small crates of up to 17 kilos, followed by rigorous selection, both in the vineyard and in the cellar.
After gentle pressing, the must undergoes primary fermentation in temperature-controlled stainless steel tanks. Ten per cent of the Chardonnay matures further in wood until the spring after the harvest, after which the second fermentation takes place in bottle. The wine then matures for at least 32 months on the yeasts, without any dosage, fully expressing its pure and unadulterated character.
In the glass, this Franciacorta presents itself straw yellow with delicate golden reflections. The nose opens with refined aromas of exotic fruit, while the palate is elegant and layered, with a mineral core and a long, fresh finish. Thanks to its refined structure and lively acidity, it is an excellent partner with dishes such as scottona tartare or salmon sashimi. Served at 7°C, it shows its full finesse and precision.
