La Montina's Franciacorta Extra Brut is a sophisticated sparkling wine originating from vineyards on recent moraine soils with shallow, siliceous soils. These terroirs are ideally suited to produce grapes with fresh acidity and pronounced minerality. The blend consists of 80% Chardonnay and 20% Pinot Nero, hand-harvested at the peak of ripeness and carefully selected in both vineyard and cellar.
After gentle pressing, only the best part of the juice is used for vinification. First fermentation takes place in temperature-controlled stainless steel tanks, with 10% of the Chardonnay aged in wood until the spring after harvest. The wine then undergoes second fermentation in bottle and matures on yeasts for at least 22 months. The low sugar content of only 3.5 grams per litre emphasises the pure and fresh character of this Extra Brut.
In the glass, it presents pale yellow with green reflections and a delicate mousse. The aroma is delicate, with aromas of citrus blossom and fresh fruit. On the palate, it is dry, direct and lively, with a nice balance between freshness, flavourful intensity and mineral tension. Perfect as an aperitif with oysters, raw prawns, tempura or Grana Padano, and best served at 7°C.
