Cantina Sabaini's Garganega Spumante Brut is a lively sparkling wine that perfectly reflects the freshness and elegance of the Val d'Illasi. The grapes come from hilly vineyards at an altitude of 175 metres, where they benefit from an ideal north-east and south exposure. Thanks to the alluvial soils rich in rocky material, the Garganega grapes develop a refined minerality and fresh acidity. Harvesting takes place entirely by hand in September, at the time when the grapes reach their optimal balance between freshness and ripeness.
After destemming and crushing, the wine undergoes fermentation on fine lie in stainless steel tanks at controlled temperatures between 16 and 18°C for about three months. Second fermentation then takes place in pressurised tanks for around 60 days, producing a delicate and persistent mousse. In the glass, the Garganega Spumante Brut shows up bright green-yellow in colour, with a delicate bouquet of white flowers and a fresh, fruity nose. The palate is dry, lively and elegant, with a harmonious balance between fruit and freshness that makes it extremely invigorating.
This sparkling wine is ideal as an aperitif, but also goes beautifully with light starters, salads and fish dishes. Serve it well chilled, between 6 and 8°C, to fully unleash its delicate aromas and refreshing character.
