Giolica from Fattoria Pagnana is an elegant IGT Rosso Toscano composed of Cabernet Sauvignon and Merlot, vinified with care and skill. Fermentation takes place in cement tanks with natural yeasts, leaving the grape skins in contact with the juice for a fortnight. The wine then matures for six months in cement, followed by a year partly in barriques and tonneaux, and at least another six months in bottle. This careful process produces a wine with structure, depth and balance.
In the glass, Giolica presents itself with a bright ruby colour and refined aromatic complexity. The nose is fruity with notes of blueberries, slightly unripe blackberries and raspberries, complemented by subtle balsamic influences, spices and a hint of toast. The wine stands out for its persistent finish, refined acidity and its potential to age beautifully.
Giolica is an excellent companion to flavourful dishes such as rack of lamb, game ragout or a classic osso buco. It also goes beautifully with grilled vegetable dishes or a rich mushroom risotto. A Tuscan red wine that harmoniously blends modernity and tradition.
