The 2021 Grauburgunder Reserve trocken from Hirschmüller is a powerful and elegant white wine from Muschel limestone soils around Lauffen am Neckar. This chalky soil gives the wine its characteristic tension, minerality and refined structure. After gentle pressing, the wine is fermented in a 500-litre oak tonneau, in which it then ages for 18 months on full lie. This prolonged aging in new wood creates complexity, intensity and a rich texture that clearly distinguishes this Reserve from classic Grauburgunders.
On the nose, the wine presents itself intensely spicy, with aromas of crisp, toasted hazelnuts, ripe pear and hay. These aromatic layers are beautifully carried by the subtle wood influences and give a taste of the depth that follows in the glass. On the tongue, the wine shows a full, rich style, combined with a fresh grip that provides tension and balance. Aging on the lie gives it a creamy texture and a long-lasting, fruity finish.
Thanks to its powerful body and refined wood structure, the 2021 Grauburgunder Reserve is an excellent gourmet wine. It goes perfectly with dishes such as creamy risotto, poultry, veal, sautéed mushrooms or soft, nutty cheeses.
