The 2021 Cuvée Cabernet trocken from Wein & Sektgut Hirschmüller is a powerful and refined red wine that originates on loess loam and Muschel limestone soils around Lauffen am Neckar. The blend consists of 60 per cent Cabernet Dorsa and 40 per cent Cabernet Franc, grape varieties that develop deep colour, aromatic complexity and firm structure in these warm plots. After an eighteen-day maceration, the young wine is gently pressed and then raised for as many as thirty-six months in used 500-litre wooden barrels, giving it round tannins and an elegant ripeness.
In the glass, the wine shows an intense blackberry-red colour. The aroma opens with notes of blackcurrant, juniper, bay leaf and ripe blackberry, complemented by a subtle smoky accent and a soft mocha note. This combination gives the wine an intriguing and inviting aroma profile typical of cabernet grapes grown on calcareous soils. The aroma already suggests that this is a wine with power and tension, but also finesse.
On the tongue, the Cuvée Cabernet is full and juicy, with structure-forming but at the same time round and well-integrated tannins. The wine shows a pleasant spiciness beautifully intertwined with the dark fruit, and the finish is long, warm and harmonious. This is an expressive red wine that goes extremely well with dishes such as grilled entrecote, herb stew, game dishes or hard cheeses. The 2021 Cuvée Cabernet is made for lovers of powerful, characterful wines with depth and elegance.
