This Sparkling Ribolla Gialla Brut comes from the rugged northeast of Friuli, where the hills of Ramandolo slowly turn into mountains and vines cling to steep, north-facing terraces. Here, between cool nights and warm days, a tension is created in the grapes that you taste right back in the glass. Ribolla Gialla, an ancient local variety, gets a modern, sparkling translation at Dario Coos that stays true to its origins, but at the same time invites lightness and pleasure.
The wine is harvested by hand at the beginning of September and undergoes a lengthy fermentation from the must, without malolactic fermentation. This produces a refined mousse, with a lively but elegant character. In the nose fresh and youthful, with notes of citrus, green apple and white flowers. In the mouth tight and pure, with a fine perlage and a persistent freshness that never becomes sharp, but rather invites the next sip.
