CENTURIONE Romagna Sangiovese Superiore DOC is a powerful and structured interpretation of 100% Sangiovese, from the hills around Serra di Castel Bolognese at 180 metres above sea level. The grapes grow in two selected vineyards, Vigna del Pino and Vigna del Lago, where low yields and careful vineyard work ensure concentration and depth. Harvesting takes place in the second to third week of September, when the grapes have reached their optimal ripeness and are selected by hand.
In the cellar, the grapes are destemmed and fermented in glass-lined concrete tanks, with temperature control between 28 and 30 degrees. The skin maceration lasts until the end of fermentation, providing structure, colour and aromatic intensity. The wine then matures for six months in the same concrete vats, followed by bottling and further bottle maturation. This approach preserves the pure character of Sangiovese and enhances its natural tension.
In the glass, the wine shows a bright ruby red colour. The aromatic profile is intense and persistent, with clear notes of morels and violets. On the palate, CENTURIONE is full but tight, with remarkable structure and balance between fruit, acidity and tannins. Served at 16 to 18 degrees, this Superiore comes into its own at the table, where it shows both power and elegance.
