"Bollicine" Pecorino Vino Spumante is a sparkling wine that showcases the fresh and lively character of the Pecorino grape in a sophisticated bubbly form. The grapes are harvested by hand in late August on calcareous soils with clay and sand layers at 180 metres altitude. After harvesting, they undergo low-temperature vinification, followed by a second fermentation in autoclave for six months with indigenous yeasts. This process creates a wine that retains its aromatic purity and elegance, enriched with a refined mousse.
In the glass, the wine sparkles straw yellow. The bouquet opens with fresh notes of citrus and exotic fruit, complemented in the finish by subtle hints of bread crust. On the palate, it is harmonious and persistent, with a lively character in which delicate aromas of peach and mango emerge. The balance between freshness and fruity roundness makes it both festive and gastronomically interesting.
