Domein Holset Classic 2022 is a characterful sparkling wine from the limestone slopes of Holset and Voerendaal in South Limburg. Produced according to the traditional method, this cuvée blends 60% Chardonnay with 40% Pinot Noir. The grapes are sustainably grown, hand-harvested and carefully vinified in Lemiers. Gentle whole-bunch pressing preserves purity and finesse, while part of the base wine matures in Burgundian oak, alongside stainless steel and ceramic. Full malolactic fermentation and 30 months on the lees add depth, texture and complexity.
On the nose, the Classic reveals fresh citrus, crisp red fruit and elegant hints of brioche and nuts. The palate is dry, lively and refined, with a fine mousse and vibrant acidity that bring tension and length. A modest dosage of 4 g/l keeps the style precise and fresh, while subtle oak ageing lends roundness and complexity without dominating the wine. The result is a sparkling wine that combines approachability with serious structure and finesse.
Perfect as an aperitif, this Classic also shines at the table. Pair it with oysters, scallops, ceviche or delicate fish dishes. It works beautifully with sushi, tempura or soft cheeses such as brie and young goat’s cheese. Thanks to its bright acidity and elegant texture, it is also an excellent match for light dishes with citrus accents or creamy sauces.
