The Sarnero is a distinctive, artisanal Pinot Nero sourced from carefully selected plots in the estate’s highest vineyards, on east-west-facing, certified organic slopes at an altitude of over 500 metres. The soil consists of sedimentary clay, gravelly sand and alluvial silt containing marine fossils from the Middle Pliocene, a unique terroir that lends the wine its minerality and refinement. Following a hand-harvest and temperature-controlled fermentation, the wine matures for 18 months in oak barrels, followed by a further year of bottle ageing. This extended ageing gives the Sarnero remarkable depth and complexity, allowing the grape to truly come into its own at this altitude.
In the glass, the Sarnero displays a refined ruby-red colour. The nose is rich and expressive, with notes of vanilla, cinnamon, blue raspberry, fresh plum and balsamic undertones. On the palate, the wine combines lovely freshness with well-integrated tannins, resulting in a balanced, elegant and juicy wine with a long finish. The oak ageing adds depth and roundness without overpowering the delicate character of the Pinot Nero.
With its elegant structure and rich aromas, the Sarnero pairs excellently with poultry, duck, rabbit, game, truffle dishes and pasta with mushroom sauce. It also pairs particularly well with mature soft cheeses and dishes featuring red fruit reductions.
