Sotto Le Stelle is Nostalgia’s big brother — with more depth, more complexity, and made for those who take their time. The wine is named after the I Ciacca hotel of the same name in Picinisco. The production process is demanding: whole bunches are pressed at low pressure, the must is left to settle for three days, and the wine then ferments slowly at 18°C without the addition of yeasts. After fermentation, it matures for at least twelve months on its lees in concrete vats, followed by a further 36 months in the bottle. Patience pays off.
In the glass, Sotto Le Stelle is a deep golden yellow, almost amber. The aroma is inviting and complex: ripe stone fruit, musk, a hint of toast and a deep minerality that takes you back to the vineyard’s limestone soil. On the palate, the wine is full-bodied and juicy, with good acidity that lends it freshness. The flavours are layered: apricot, white peach, subtle herbs and a long, warm finish. This is a wine that reveals more and more the longer you drink it.
Sotto Le Stelle needs something substantial on the plate. Think of poultry, truffle dishes, mature cheeses or dishes with a touch of cream or butter. Also wonderful with a good piece of grilled fish. Serve at 12–14°C.
The wine comes directly from the winemakers, they send the bottles themselves.
