L'Essenza is the absolute odd one out in the I Ciacca collection — a dry passito. This means that the Maturano grapes are picked ten days before the main harvest and then left to air-dry for four months. This drying process concentrates the flavours and sugars. The grapes are then gently pressed and fermented slowly in stainless-steel tanks. The wine is subsequently aged for no less than four years in new 100-litre French oak barrels. The end result is something truly special.
In the glass, L’Essenza is a clear golden yellow. The aroma is intense and complex: pink grapefruit, cedar, herbs and a balsamic undertone. On the limestone soil at 600 metres, the Maturano grape grows slowly and with concentration — and you can taste it. On the palate, the wine is dry and savoury, with tannins you wouldn’t expect in a white wine. These tannins come from the extended contact with the skins and lend the wine both strength and aroma. The finish is long and complex.
L’Essenza is a wine that demands and deserves attention. It pairs surprisingly well with roast beef, rich fish dishes or full-flavoured cheeses. But it’s also lovely simply in your glass, when you just want to sit back and relax.
