Filosofia is I Ciacca’s most daring wine — and also its most distinctive. It is what is known as an ‘orange wine’: a white wine that has been in contact with the skins for months, just as red wines are. The grapes are partially destemmed and fermented with some of the stems in concrete tanks for 20 to 40 days. The wine is then left to rest on the skins and stems for a further 10 months. Only then is it racked, aged for a few more months in concrete and subsequently for 24 months in the bottle.
Filosofia has a warm, golden-orange colour — quite unlike an ordinary white wine. The aroma is intriguing and somewhat unexpected: dried fruit, orange peel, herbs, a hint of spices and an earthy depth you won’t soon forget. The wine derives its mineral backbone from the vineyard’s limestone soil. On the palate, Filosofia is dry and savoury, with soft tannins — something you wouldn’t normally expect from a white wine — and a long, evolving flavour.
This is a wine for those looking for something different. Filosofia pairs well with dishes you’d normally serve with a red wine: game, venison, strongly matured cheeses, and dishes with umami or Asian flavours. Serve at 14–16°C.
