The Valle 'Scura Riserva is the flagship wine of I Ciacca’s red range — and it certainly shows. The grapes, 80% Cabernet Sauvignon and 20% Merlot, are hand-picked in the first week of October. Following spontaneous fermentation in steel vats, the wine matures for at least nine months in egg-shaped concrete vats, followed by eighteen months in new 500-litre French oak barrels. It is then aged for a further 6 to 9 months in the bottle. This is a wine that has truly been given time to develop.
In the glass, the wine is a clear red with a brilliant ruby colour. The aroma is rich and inviting: blackcurrants, blackberries, a hint of toasted bread and black pepper from the oak. The limestone soil of the Val di Comino gives the wine its firm yet elegant structure. On the palate, it is full-bodied and well-balanced, with ripe tannins that feel silky smooth. The flavour is warm, deep and long-lasting. This is a wine that will still be superb in five or ten years’ time.
The Riserva calls for something substantial to accompany it. Grilled red meat, game, rack of lamb or strongly matured cheeses – this is where it is at its best. Serve at 16–18°C and allow it to breathe for a while before pouring.
The wine comes directly from the winemakers, they send the bottles themselves.
