Valle 'Scura Numero 7 is I Ciacca’s most indigenous red wine. Whilst the other Valle 'Scura wines are based on Cabernet Sauvignon and Merlot, this one centres on Cesanese — an ancient red grape variety from Lazio that is gaining increasing recognition. Supplemented with small quantities of Cabernet Sauvignon, Merlot and the rare Giulia, the result is a blend that combines tradition and innovation.
In the glass, Numero 7 has a beautiful ruby-red colour with a bright, red sheen. The aroma is enticing and full of ripe red fruit: amarena cherries, cassis and a hint of ripe plum. In between, there is a dark note of black cherry and a slightly spicy undertone. The limestone soil at 600 metres provides the mineral freshness that underpins the whole. On the palate, it is full-bodied and well-balanced, with lovely acidity, soft yet distinct tannins and an intense, lingering flavour.
Numero 7 pairs well with rich pasta dishes, grilled red meat or a lovely platter of mature cheeses. Serve at 14–16°C.
