Who says the Moselle can only produce white wine? The Pinecone Pinot Noir proves otherwise. On the steep slopes of the Lieserer Schlossberg and the Noviander Klosterberg, Pinot Noir reveals its most delicate yet profound side. This is a grape variety that, on steep slate slopes, receives precisely the coolness and minerality it needs to express its elegance, without extraction or heavy oak taking over the story.
The grapes are hand-picked on the steep slopes and ferment spontaneously without the addition of yeasts. The wine is then aged for a long time in used 225-litre French oak barrels. This use of used oak is a deliberate choice: it provides oxygen and structure, whilst allowing the fruit and slate minerality to shine through fully. No sulphites added, unfiltered and 100% vegan. In the glass, the wine is a clear cherry red. The nose is understated yet revealing: cool red forest fruits, sour cherry and a subtle smoky, herbal note. On the palate, it is precise and elegant, with lively acidity and the characteristic minerality of the Moselle slate soil.
This is a wine that deserves attention and needs time to develop. Allow it to breathe for a while after opening and serve it with dishes that have some substance but also finesse. It pairs beautifully with pan-seared venison with juniper berries, a mushroom risotto with fresh thyme or roasted beetroot with goat’s cheese. Serve at 14–16°C.
