Cantina Ongaresca’s Merlot demonstrates what the sedimentary soils of Monte Ongaresca can do for this classic grape variety. The selected grapes are dried for 60 to 75 days in a naturally ventilated room, a traditional appassimento technique that concentrates the flavours and enhances the complexity. The wine then ferments spontaneously, is aged for 12 months in wooden barrels and is subsequently left to rest for 18 months in a naturally ventilated environment.
In the glass, the Merlot displays an intense ruby-red colour with violet highlights. The nose is powerful and herbal, with pronounced notes of violets and berries. On the palate, the wine is intense, pleasant and savoury, with notes of blackberries, chocolate and vanilla, complemented by an intriguing initial hint of mineral flint. Structured and powerful, yet well-balanced.
Cantina Ongaresca’s Merlot is excellent with game, stews, mature meats and smoked cheeses. Serve at 16–18°C and allow it to breathe before serving.
