Product description
The Pas Dosé Sessanta is the absolute flagship of Cantina Ongaresca’s sparkling wine range. The name refers to the sixty months – five full years – that this wine spends on its fine lees in the cellar. This is one of the longest ageing periods for an Italian Metodo Classico outside Franciacorta and Trentodoc. The result is a sparkling wine with a depth and complexity one rarely expects from the hills of Vicenza.
Chardonnay and Pinot Nero are fermented at a controlled temperature and then placed on the fine lees using the traditional bottle-racking method. At least 60 months later, the wine is disgorged, without any additional dosage, which gives it its dry, pure character. In the glass, it is a brilliant yellow with a fine, persistent perlage. The nose combines citrus, white blossom and a rich yeasty note from the long ageing on the lees. On the palate, it is energetic, assertive and persistent, with a lovely balance and a long, mineral finish.
The Pas Dosé Sessanta is highly versatile at the table. It pairs well with elegant pasta dishes and risottos, as well as light fish and seafood dishes, and is excellent as a stylish aperitif. Serve at 6–8°C.
