Product description
The Alto Cumulus is Tenuta dei Mori’s flagship wine, named after the high cumulus cloud that towers above the other clouds. It is the same blend as the Cumulus, from the same vineyards, but here everything gains in intensity, depth and ageing potential. Cellar master Maurilio Chioccia draws out the very best that Villanova’s clay-rich silt soils have to offer in the Alto Cumulus.
Following fermentation on the skins at 25–28°C, the Alto Cumulus is first aged in stainless steel tanks and then for 8 months in French oak tonneaux. Bottling takes place in December. In the glass, it is deep and intense. The nose is complex and inviting, with vanilla, toasted notes, dark fruit and blackcurrant, complemented by elegant balsamic and spicy notes. On the palate, it is powerful and round, with soft tannins and a long, enveloping finish. A wine that will easily benefit from a further 3 to 5 years’ ageing.
Excellent with roasted and braised red meat, game and strongly matured cheeses. Serve at 15–16°C after half an hour’s aeration.
