The "Nebbiolo" by Marcel Zanolari comes from the enchanting Valtellina region in Sondrio province, from the town of Bianzone. This red wine is made from 100% Nebbiolo grapes, grown in a vineyard since 2001. With 7894 m² and 7100 plants per hectare, it reflects the finesse of this mountain area. The low yield of about 270 grams per vine highlights care and quality, giving this Nebbiolo a gentle elegance.
The process uses natural methods and skill. It starts with partial appassimento in the vineyard, where the grapes dry slightly to boost their flavor. The wine is made in steel tanks with a cold phase of a few days and fermented with natural yeasts. Then it ages for at least 36 months in used barrels, adding a refined structure. Unfiltered and pure, it comes in 75 cl bottles. Serve at 17-18 °C, opened a few hours before; it keeps for 1-10 years.
The "Nebbiolo" tastes fruity with wild berries and roses, plus a light hint of cocoa and soft tannins. This makes it delicate and versatile.
