Domaine Gilg's Auxerrois Vieilles Vignes 2024 is an elegant and accessible white wine from Alsace, from more than 35-year-old vines around Mittelbergheim and Barr. The vineyards grow on marno-limestone-rich soils, which provide a nice balance between fruitiness, structure and freshness. Working entirely organically, the estate combines traditional soil management with natural vegetation between the rows. This sustainable approach keeps the soils vibrant and allows the old vines to best express their character. The grapes are harvested by hand and carefully selected so that only healthy and perfectly ripe bunches are used.
In the cellar, a vinification that emphasises the pure and fruity character of Auxerrois is chosen. The grapes are gently pressed as whole bunches, after which the juice is statically clarified for 24 hours. Fermentation takes place in thermally controlled stainless steel tanks at around 20°C and lasts around 15 to 20 days. The wine is then aged for about eight months in inox, which preserves its freshness and brings out the grape's full aromatic expression.
In the glass, this Auxerrois presents itself with a bright, pale yellow colour and a seductive bouquet of ripe yellow fruits. On the palate, the wine is dry, round and full-bodied, with a pleasant structure and a fresh, elegant finish. Thanks to its soft character and nice balance, this wine is an excellent companion to starters, charcuterie, poultry and asparagus. The Auxerrois is a versatile gourmet wine that goes perfectly with many dishes where a fresh, harmonious white wine is desired.
