Domaine Gilg's Sylvaner Vieilles Vignes 2023 is a characterful white wine from Alsace, from more than 35-year-old vines around Mittelbergheim and Barr. The vineyards are on marno-limestone-rich soils, which provide a nice balance between freshness, structure and minerality. Working entirely organically, the estate combines traditional soil management with natural vegetation between the rows. This sustainable approach keeps the soil healthy and allows the old vines to fully express their character and depth. The grapes are harvested by hand and carefully selected so that only the best bunches are used.
In the cellar, a vinification that emphasises the pure fruit of the Sylvaner is chosen. The whole grape bunches are gently pressed, after which the juice is statically clarified for 24 hours. Fermentation takes place in thermally controlled stainless steel tanks at around 20°C and lasts around 15 to 20 days. The wine is then aged for about eight months on inox, which allows it to retain its fresh and lively character and show off the grape's aromatic finesse to full effect.
In the glass, this Sylvaner shows a bright, pale yellow colour with fresh aromas of fruit and subtle spicy notes. On the palate, the wine is harmonious and refreshing, with a nice balance of fruitiness and a lively, fresh finish. Thanks to its versatile character, this is an excellent companion to starters, charcuterie, asparagus, choucroute, fish dishes, white meat and fresh cheeses. This elegant Alsatian wine also comes into its own as an aperitif.
