Canto del Grillo by Abbazia San Giorgio is a natural amber wine made from 100% Grillo grapes grown on the clay hills of Pantelleria. The grapes are harvested by hand in early September and fermented spontaneously with native yeasts. A 12-day skin contact period extracts color, aromas, and texture. The wine matures for 4 months in steel tanks and is bottled unfiltered, with no added sulfites.
In the glass, it reveals a bright amber hue with natural cloudiness. The nose offers fruity notes with floral hints, while the palate is dry, mineral, and slightly spicy with a lingering finish of citrus and herbs.
Canto del Grillo pairs beautifully with grilled shellfish, ceviche, fermented vegetables, or umami-rich vegetarian dishes. Also perfect with Sicilian antipasti. Serve at 12–14°C to fully enjoy its expressive complexity.
