This cuvée is Vignobles Mallard's playful ode to natural wine: honest, unpolished and pure. The vineyards (3 hectares) are on argilo limestone soils, which add tension and structure to the wine. Everything here is about fruit expression and drinkability, without frills - a wine that returns to its essence.
The wine is made from 100% Merlot and vinified at low temperature to highlight the fruit and keep the tannins soft. No additives are used; fermentation is with indigenous yeasts and no added sulphites. This keeps the character of grape and terroir unfiltered.
In the glass, the wine is deep and sunny in colour. The nose opens with cherry, peony and berries. On the palate, it is broad and concentrated, with fresh tension and crisp tannins that carry the length. The whole is harmonious, juicy and surprisingly drinkable for a natural wine with structure.
