Controtenore Riserva from Cantine Harmonia is the estate's most layered and ripest expression. Originating from Manduria, the heart of the appellation, this wine grows on characteristic red earth under the warm sun of Puglia. The vines are traditionally managed according to the Alberello system, with a density of 5,000 plants per hectare and a low yield of 45 quintals per hectare to ensure maximum concentration.
The grapes, 100% Primitivo di Manduria, are harvested by hand in crates and gently destemmed. Maceration lasts 18 days for 80% of the must and 25 days for the rest, followed by fermentation with selected indigenous yeasts at 24-26Ā°C. The wine is then aged for no less than 24 months in French and American oak barriques and at least 12 months in bottle, providing tremendous depth and refinement.
In the glass, the Riserva shows itself powerful, intense and structured. The long wood aging gives complexity, ripe tannins and a velvety texture, while the warm character of Primitivo is fully expressed. The finish is long and harmonious, with impressive storage potential. Ideal with red meat, game, mature cheeses and artisanal charcuterie.
