Levare is the most concentrated and powerful expression of Primitivo within Cantine Harmonia. Originating from the red earth of Manduria and planted according to the traditional Alberello system, this wine delivers exceptional intensity thanks to an extremely low yield of only 36 quintals per hectare. The grapes are harvested by hand and carefully selected to ensure maximum ripeness and concentration.
After a long maceration and controlled fermentation, Levare develops its deep structure and aromatic richness. The wine then undergoes prolonged maturation in French and American oak, followed by bottle maturation, resulting in a powerful yet refined Primitivo with impressive depth, warmth and complexity. With an alcohol content of 15.75% (total 19.08%), it shows the full potential of the Manduria terroir.
In the glass, Levare presents itself intensely and layered, with ripe dark fruit, spicy nuances and a long, powerful finish. It is at its best at 18-20Ā°C and makes a perfect match with mature and blue cheese, dry patisserie or dark chocolate. A meditative wine that brings together structure, concentration and elegance into one impressive whole.
