Controtenore 2021 - Primitivo di Manduria DOP from Cantine Harmonia is a powerful and concentrated interpretation of Primitivo, from the municipality of Manduria in Puglia. The wine is made from 100% Primitivo di Manduria DOP and grows on characteristic red clay soils, planted according to the traditional Alberello system with a density of 5,000 vines per hectare. With a low yield of 45 quintals per hectare, maximum aromatic intensity is sought.
The grapes are harvested by hand in 20-kg crates and undergo gentle pressing to preserve their delicate aromas. Maceration lasts 18 days for 80% of the must and 25 days for the remaining 20%, followed by temperature-controlled fermentation at 24-26Ā°C. The wine is then aged for 12 months in French and American oak barriques and at least six months in bottle before release.
In the glass, Controtenore shows intense and powerful, with an alcohol content of 16.5%. The long wood aging gives depth, structure and complexity, while the ripe fruit notes and spicy accents provide balance. An impressive, layered Primitivo with a full body and long finish, perfect with red meat, game, mature cheeses and artisanal charcuterie.
