Toccata e Fuga 2019 is a monumental Primitivo di Manduria that brings together power and precision in an impressive composition. Originating from Manduria and rooted in the characteristic Terra Rossa soils, this wine is produced according to the traditional Alberello Pugliese system with a low yield of 4.1 tonnes per hectare. This restriction in yield ensures maximum concentration and aromatic intensity.
The wine is made from 100% Primitivo di Manduria DOP and is harvested manually in 20 kg crates. Vinification includes a 12-day maceration with selected yeasts and fermentation at 27-28Ā°C. The wine then ages for at least 24 months in French and American oak barriques, followed by a further 18 months of bottle aging. This long ageing process gives depth, structure and refinement.
In the glass, Toccata e Fuga shows powerful and concentrated, with an alcohol content of 15.5%. The long wood aging creates a complex and layered wine with ripe fruit notes, integrated spiciness and a long, warm finish. An impressive Primitivo with great storage potential, ideal with red meat, game, mature cheeses and artisanal charcuterie.
